Its been a long time I didn't post because of personal reasons, but thanks to the Lord I have decided to make some time to dedicate to my blog, which I love. I have been thru so many things during this time; but the Lord has been good to me and help me get back up again. Sooo here I am. So today I'm sharing this wonderful recipe and a small video tutorial which is in Spanish. And now for the recipe:<br />

Marshmallow Fondant<br />
<br />
16oz Marshmallows<br />
2 oz water<br />
1 tbsp flavor/extract<br />
2 lbs powder sugar<br />
<br />
You will need a microwave safe bowl, Crisco and wooden spoon for mixing. First place the marshmallows and water in micro safe bowl and micro for 20 seconds and mix with the wooden spoon, After mixing if not melted, microwave for 20seconds more and mix and scrapping the bowl making sure everything is melted. Keep mixing because sometimes the heat from the bowl will melt the rest. This is Super important because if you over heat, it will loose its elasticity and it will not work. At this moment add flavoring and half of the powder sugar and mix with the spoon. Mix until all sugar has disappear and add the remaining sugar and mix again. Put some of the Crisco on the table so it doesnt stick and pour your mixture on the table and massage until it does not stick to your hands; if their is humidity in your area you may need to add more sugar if it still sticks to your hands. Once it does not stick, wrap in cling plastic wrap and then in a ziplock bag so it doesnt dry out. Let it stand for 24hrs. If not will be using soon save it in the<span style="text-align: center;"> fridge,</span><br />

Hola, Hace mucho tiempo que no posteaba en este blog que tanto amo, pero he pasado por mucho durante este tiempo y Dios ha sido buen y me ha ayudado. Aqui le traigo un tutorial de como hacer una pasta Laminada de marshmallow. Esta es una pasta riquisima y super economica de hacer. Ahora con la receta:<br />

16 oz de Marshmallows<br />
2oz de agua<br />
1cda de sabor de su preferencia<br />
2lbs de azucar polvorizada<br />
<br />
Necesitaras un bowl que sea para microhondas, manteca crisco y cucharada de madera,<br />
Colocar los marshmallows en el envase con el agua y calentar por 20 segundos en el microhondas. Sacar y mezclar bien moviendo toda la mezcla de abajo y volver a colocar en el microhondas y calentar 20 segundos mas y volver a mezclar bien removiendo bien la parte de abajo pues se concentra mas el calor abajo del envase. Regularmente ya debe de derretir completamente todo depende de su microhondas. Es importante no sobre calentar ya que esto causara que pierda la elasticidad y no servira. Una vez derretida anadir el sabor y la primera libra de azucar, mezclar bien y colocar manteca sobre la mesa de trabajo y amasar su mezcla anadiendo el restante de la azucar 10x hasta que ya no se le pegue a sus manos. Luego envolver en papel elastico y luego en una bolsa ziplock.<br />
Guardar fuera si usara al dia siguiente sino guardar en nevera. <br />

Ummmmmm Sweet & Salty! I'm a big fan of everything Sweet and Salty, well almost everything. These cookies were a big hit at a girl friend's get together. They disappeared instantly once they took a bite out of these babies. Very easy and quick to make . Only one problem, they don't last long :(<br />
<br />
1/2 c Butter softened<br />
1/2 c sugar granulated<br />
1/4 c brown sugar<br />
1 egg<br />
1 tsp vanilla extract<br />
1 1/4 c All Purpose Flour<br />
1/2 tsp baking soda<br />
1/4 tsp kosher salt<br />
2 cups popped popcorn coarsely chopped (I used buttered)<br />
<br />
Heat Oven to 350 F. Beat Butter and sugars well. Add in egg and vanilla. Beat until fluffy. Slowly add in flour, baking soda and salt. Fold in popcorn and spoon teaspoon of dough onto prepared bake sheet with parchment paper, 1 inch apart. Bake 14 to 16 mins or until golden at edges.<br />

Ummmmm Salado, Dulce, Salado, Dulce, pero cuando lo unimos es como una explosión en nuestra boca, divino. Aqui estas galletas que fueron una sensación en la fiesta de amigas, donde se desaparecieron como arte de magia. Y si tus chicos les gusta las palomitas de maiz( popcorn) estas les encantaran!!!!<br />
Ahora a la receta:<br />

1/2 taza de mantequilla<br />
1/2 taza de azucar granulada<br />
1/4 taza de azucar morena<br />
1 huevo<br />
1 cdta de vainilla<br />
1 1/4 taza de Harina todo uso<br />
1/2 cdta baking soda<br />
1/4 cdta sal<br />
2 tazas de popcorn ya hecho, yo use el que viene con mantequilla.<br />
<br />
Caliente el horno a 350F. Bata mantequilla con azúcares. Añada el huevo y vainilla y cremar bien.<br />
Suavemente anada la harina, baking soda y sal. Añadir en forma envolvente el popcorn y echar por cucharadas en bandeja previamente preparada con papel de hornear. Hornee 14 a 16 mins o hasta dorar levemente.<br />

My kids just love these..... I discovered this recipe a few months ago when someone posted it facebook but I don't remember who. As soon as I read it, I copied it and made it the next day. And oh my God my kids loved it!!<br />
This recipe makes a great entry at any party specially for kids and teens. I'm not a big fan of hotdogs but all kids seem to be!!!<br />

These are also very fun to make with the kids, they'll love it!<br />
<br />
Ingredients<br />
<br />
1C All purpose flour<br />
1 c Cornmeal<br />
1/4 c Sugar<br />
1T baking powder<br />
1/2 tsp salt<br />
1 egg<br />
1 c milk ( I used 1/2 c evaporated milk and 1/2 c water)<br />
1 pack of Hotdogs (cut in half for mini)<br />
wooded sticks<br />
<br />
Mix all ingredients together with mixer except for the hotdogs. Once all mixed together pour into a tall glass enough to introduce the entire hotdog. Pass the wooden stick thru the 1/2 hotdog<br />

Wow... estoy mini corn dogs les fascina a los ninos y jovenes. Mis hijas se vuelven locas cuando los hago y no duran mucho. Esta receta la encontre en Facebook pero no recuerdo quien la posteo pero es realmente buena y rapidita de hacer, te toma como unos 10 minutitos en hacer todo el proceso y los ninos les encantan. Asi que no esperes mas y has la ya!!!!<br />

1 Cda de Baking Powder</div>

1/2 cdta de sal</div>

1t de leche ( utilize 1/2t leche evaporada y 1/2 t agua)</div>

1 Paqt de Hot Dogs picados en la mitad</div>

Mezclar todos los ingredientes con batidora menos los hotdogs. Una vez unidos los ingredientes hechar en un vaso alto donde puedas introducir el hotdog ya previamente colocado en el palillo de pincho. Cuando coloques todas las mitades de hotdogs en los palillos los introduces en el vaso con la mezcla y los fries en una ollita onda (ver foto arriba). Escurrir el papel toalla y servir. Puedes servir con una salsita de MayoKetchup etc. </div>

Ohhhhh, Gosh These sure are awesome cookies. I call them Gourmet cookies, because they are different and not your all time cookie. The first time I tasted these was in a Christmas season almost 14 years ago. They came in a glass bowl as a make them yourself mixture, just adding butter, eggs and vanilla. So I made them and they were sooooo delish I needed to get the recipe. So I put my taste buds and my brain to work until I figured it out. And here they are:<br />

1 stick of Butter<br />
1/4 cup granulated sugar<br />
1/4 cup brown sugar<br />
1 egg<br />
1/2 tsp vanilla extract<br />
1 cup all purpose flour<br />
1/2 tsp Baking powder<br />
1 cup regular plain cornflakes<br />
1/2 cup shredded coconut<br />
1 cup old fashion rolled oats<br />
1 cup of white chocolate chips ( can also be regular chocolate chips)<br />

Cream butter and sugars, add in egg and vanilla. Beat until combined only. Add flour and b. powder. Now add the rest of the ingredients and combine.<br />

Ohhhh estas galletas son riquisimas...... Yo les llamo galletas gourmet. Estas las hice hace como 14 anos atrás cuando compre en unas navidades un envase que contenía los ingredientes y las haces tu misma solo añadiendo mantequilla, huevos y vainilla. Y me gustaron tanto que tenía que conseguir la receta, estudie la etiqueta y los nombres cientificos que tenia la etiqueta como ingredientes y puse mi paladar y cabezita a trabajar. Y huala!! La receta! </div>

Poner por cucharadas en bandeja previamente forrada con papel de hornear. Hornear por 8-10 mins o hasta doraditas. Dejar enfriar por 5 mins y a disfrutar!!!!</div>

These squares are my fave dessert, something soooo simple and so easy to make but so delish, yummmmy!<br />
The first time I tasted these delight was in a little pastry store here in Puerto Rico called Sweet and Cakes. And of all the sweets they have nothing would call to me more than these. I was addicted ! So I took it as a goal to get the recipe some how. So here is my version of it....<br />

Ingredients<br />
<br />
Puff Pastry Sheet<br />
8 oz of Cream Cheese<br />
1/2 to 1 Cup powdered sugar<br />
1/2 stick of butter<br />
1 tsp Vanilla<br />
Strawberries, raspberries, Kiwi or what ever fruit you like<br />
Whipped Cream or Cool Whip<br />
<br />
Prepare baking sheet with parchment paper and preheat oven to 350F. Cut Pastry Sheet into 2"x2"or 3"x 3" square (the size you prefer), Bake for 15min or until golden edges. Cream the Cheese and butter, add the powder sugar slowly and vanilla. Cream until fluffy. Place in the fridge while the pastry is baking.<br />

Once done and cooled, cut a square in the center and remove. Fill the center with Cream Cheese mixture, Top with Cool Whip and desired fruits.<br />

Este postrecito es mi favorito, tan facil y sencillo pero tan rico y liviano. Yummmm! La primera vez que probé este postre fue hace muchos tiempo en una pequeña tiendita llamada Sweet and Cake. De todos los postres tan ricos que hay solo tenía ojos para este. Así que me tome la tarea de conseguir la receta y aqui mi version:<br />

Ingredientes<br />
<br />
Pasta de Hojaldre<br />
Un queso Crema<br />
1/2 a 1 taza de azucar en polvo (depende de cuan dulce lo prefiere)<br />
1/2 barra de Mantequilla<br />
1 cucharadita de vainilla<br />
Frutas a su gusto ( fresas, kiwi, moras.etc)<br />
Crema batida o Cool Whip<br />
<br />
Prepare la bandeja colocandole una hoja de papel encerrado. Precaliente el horno a 350F. Corte el hojaldre en cuadros de tamaño deseado ( 2"x2"o 3"x3") y hornear hasta doraditos. Retire del horno y enfriar. Mientras tanto creme el queso y mantequilla, poco a poco añada azucar y la vainilla. Batir hasta bien mezclado. Una vez fríos los cuadrados de hojaldre le cortan el centro y lo retiran (ver fotos arriba). Los<br />
rellena con la mezcla, le añades la crema batida y decoras con las frutas deseadas. Tadaaaa listas.<br />

Elephant Ears, Palmiers, Butterflies, ohhhh so many names but which ever name you want to call them, they are still wonderful and addictive. Yes, addictive after eating one, you can't stop. The best of all they are super easy to make and only take about 20 mins to make.<br />

1/2 cup sugar<br />
2 teaspoons Cinnamon<br />
Honey Glaze<br />
<br />
Mix in a cup the sugar and the cinnamon. Lay flat your Puff Pastry and pour the sugar and cinnamon mixture onto the pastry and spread to cover it completely. Now roll the sides to the middle.<br />

Ingredientes<br />

Pasta de Hojaldre<br />
1/2 taza de azucar granulada<br />
2 cucharaditas de canela<br />
Honey Glaze o Sirup de pancakes<br />
<br />
Colocas la pasta en la mesa y le polvoreas la azucar junto con la canela, hasta cubrirla completa. Enrollar los lados hasta el centro y luego la envuelves en papel encerado y colocar en el congelador para que se afirme. (Ver fotos arriba) Una vez fría, la picas en pedazos de 1/2 pulgada de ancho y los colocas en una bandeja para hornear. Hornear a 350F por 15 mins o hasta que se doren los bordes. Una vez frescos, con una brocha puedes pasarle Honey Glaze encima o simplemente dejarlos como estan.<br />

the biscoff butter with the cream cheese and put in the piping bag or just use
a small palette knife to put some on one of the pretzels and top with another
pretzel. Then refrigerate for a few minutes until it chills about 10 mins.
Meanwhile melt your candy melts or your chocolate. Once cooled, take your
sticks and dip the tip in the chocolate and pop into the bites. When all bites
have their stick, return them to the fridge for a few mins for them to stick
really well. Then remove and dip the
pops into the chocolate and cover and slowly tap on the edge of the bowl so the
excess chocolate would drip off. And now put them on parchment or wax paper to
dry. At this point you may add any
sprinkles you like. And serve…<o:p></o:p></span></div>

Here in Puerto Rico there are various booths or carts that sell these caramelized almonds and walnuts in a small paper cone for $3.50 each . The smell of these caramelized nuts takes over the mall and start screaming out to me, buy me, buy me..please. And I end up buying the bag. Its been a pretty long time since I visited the mall because its about 30 mins (on the express) away from home. Almendras, pecanas, nueces, macadamians son mis mas grande tentaciones en cualquier momento. Aqui en Puerto Rico existen varios carrito en los centros comerciales que venden estas delicias, y cada vez que visito ese centro en especifico el olor que inunda los pasillos llamando a lo lejos que las compren. Como siempre yo sedo y compro mi paquetito lleno de nueces con ese rico aroma y sabor a caramelo, Ummmm, Dios que delicia. Aquí les comparto una receta que conseguí en una pagina de una red social que comparte recetas y la probé y de veras que esta super rica.</div>

2 1/2 cups All purpose flour<br />
1 cup sugar<br />
1/4 tsp salt<br />
2 bar of butter<br />
6 oz of semisweet chocolate melted and refreshed<br />
1 tsp vanilla extract<br />

Cream butter and slowly add sugar, do not over beat. Add cooled chocolate and beat to incorporate well. Mix in vanilla and flour, Mix to incorporate, Remove from bowl and cover in plastic wrap and refrigerate for at least 1 hr to overnight.<br />

Remove, roll out and cut with your fav cookie cutter. Place on prepared baking sheet with parchment paper and refrigerate for about 15 mins. Bake 350F for 7-10 mins.<br />

En casa mis hijos les encanta el chocolate en todo lo que pueda yo hornear. Sin embargo a mi me encanta el "Shortbread" y cuando los mezcla es una explosión de galletita. Pues aqui les traigo una recetita simple y facilita de hacer. </i><br />

<i>Cremar Mantequilla y la azúcar sin sobre batir, añadir el chocolate refrescado y mezclar. Mezcle la sal con la harina.Añada la vainilla y la harina sin sobre batir solo hasta desaparecer la harina. Remover del envase y envolver en "Plastic wrap" y guardar en la nevera por lo menos 1 hr o hasta 24 hr. </i><br />

Yum.... Every time I just imagine my choco-chip cookies I just drool all over. But recently I have been thinking about my kid which is diabetic and I don't now much about the gluten free subject but I have heard that its better for people specially if they are diabetic. So I started looking for info on how to make cookies for him.<br />

One day I'm at Marshall's (my fave store by the way) and saw they had gluten free all purpose flour. Read the box and it said to change one on one, in other words 1 cup of regular all purpose flour for 1 cup of gluten free flour. I said well that's not so hard so I bought a box to give it a try.<br />

These cookies came out marvelous. I wanted to share the recipe but you may use any recipe you have that you'd like to change.<br />
<br />
Gluten free Chocolate chip cookies<br />
<br />
1 1/2 cup butter or margarine, softened<br />
1 1/4 cup brown sugar<br />
1 1/4 cup granulated sugar<br />
1 tsp vanilla extract, I use vanilla beans<br />
2 eggs<br />
4 cups Gluten free flour<br />
2 tsp baking soda<br />
1/2 tsp salt<br />
1 bag Chocolate chips<br />
<br />
Mix together flour, salt and baking soda. Set aside. Beat butter and both sugars until creamy. Add vanilla extract and eggs, beat until light and fluffy. Lower the speed on your beater and slowly stir in the flour mixture. Mixture will be pretty heavy and thick. Stir in Chips. You may use right away or leave in the fridge for a 30 min period. I prefer to wait a bit I think they taste better after waiting.<br />

Prepare your pan with parchment paper, and spoon drop your batter on the pan. Bake at 350F for no more then 10 mins (if you like your cookies soft inside and crisp on the edges.<br />

First thing is to have your cake crumb coated very lightly. This is because if it is not coated the crumbs will begin to stick to your piping tip and or start to fall off, and also if your ruffles aren't to close together the crumb part wont show thru.<br />

Take your piping bag already fitted with the tip and touching (with the wider part of the tip) the cake where you would like to begin, start by squeezing the bag and giving it a up and down motion at the same time you move your turning table if you want the ruffles side way like in the picture above.<br />

<i>1 tsp Butter Vanilla emulsion </i></div>

<i>1/4 c of Dulce de Leche ( I used homemade)</i></div>

<i>3 1/2 c of All Purpose Flour</i></div>

<i>2 tsp baking powder</i></div>

<i>Cream Butter and Sugar until change of color, add in the Dulce de Leche and mix well. Add egg and beat until combined. Now add in the emulsion and mix. Slowly mix in the flour and B. powder until cant see the flour. If the mixture is too soft just add a little more. Remove and make a ball with it and wrap with plastic wrap and refrigerate for 1hr. When its cold roll and cut as desired. bake at 350 for 8-10 or til edges are golden. Let cool well and decorate has desired with Royal Icing. </i></div>

1/4 cup Pumpkin</div>

1 tsp vanilla extract </div>

1 tbsp Pumpkin pie spices</div>

1 tsp baking Powder </div>

11/2 to 2 cups of All Purpose Flour( add more if needed)</div>

Beat butter and sugar as usually. Add egg and pumpkin. Beat only until mixed. Add extract and spices. Slowly add baking powder and flour. If the mixture is too moist just add a little more flour. Wrap with plastic wrap and refrigerate 2hrs or overnight. Roll out, cut and freeze for 10 mins. Bake at 350F for 8-10 mins. Since I like them a little crispier I left them a little longer. </div>

Today is a lovely Sunday, and after church I had decided to just relax since I had been very busy this week and today was my day off from my new exercise routine. Yeah exercise, not my favorite thing but trying to get back at it after a few years of being lazy and as a consequence the gaining of almost 30 pounds and that isnt funny. But that's another story.<br />

Soooo yes I was relax seeing a movie on my laptop when just got bored and sad HHHHaaa let me make something sweet for the <b><i>kids.</i></b> Went straight to my recipe book and looked thru it and say its been like 3 years I havent made a fruit tart! It seemed like a great idea knowing that its made with fresh fruit and sound sooo refreshing and the best part it wouldn't hurt my diet since it was made with fresh fruit, Right!!!!<br />

Lets make it!<br />

Recipe:<br />
Crust:<br />
1/2 cup confectioners sugar<br />
1 1/2 cups all-purpose flour<br />
1 1/2 sticks unsalted butter<br />
<br />
Filling:<br />
1 (8onz) package cream cheese<br />
1/2 cup granulated sugar<br />
1 teaspoon vanilla extract (I used vanilla bean paste)<br />
<br />
Topping:<br />
Fresh Fruit (any you like, may be strawberries. kiwis, blueberries, raspberries, etc.<br />
<br />
Whipped cream (optional) for garnish<br />
<br />
Preheat oven to 350 degrees F.<br />
<br />
For Crust: in food processor or your kitchen aid machine combine confectioners sugar, butter and flour til it forms a ball.<br />

With fingers press dough into the 12 inch tart pan with removable bottom. Push the dough into indentations and sides.<br />

Bake for about 10-12 min. Remove from oven and let cool completely.<br />

In another bowl beat together cream cheese, granulated sugar and vanilla until creamy. Once the crust is completely cool just add the filling to it and garnish with the fresh fruits.<br />

I L O V E tutorials! But specially if they are made by other bloggers, maybe because I'm a little lazy you might say ;) . Please omit the lazy part, not a very nice thing to say about my self. ;) Here I made a gum paste margarita which are sooo easy to make and they look beautiful on cupcakes, as cake toppers and if you make them smaller you can use them on mini cupcakes, petite fours and even cake pops.<br />

As you can see in the photo I took a piece of gum paste and massaged it and powdered some of the sugar that is in the small handi wipe pouch on the table so the gum paste do not stick to the table when rolled out. Roll out the gum paste and with the margarita cutter just cut it out.<br />

After cutting out the margarita just lay it on flower mold or on apple cartons that are round and big just like this foam mold.<br />

Now while its drying just take another small piece of paste and color it the color you desire your center to be. Roll out a small ball and with a small spatula make crisscross lines on it and let it dry. </div>

Beat egg white a bit with mixer and then add powdered sugar and make like a medium soft royal icing then add the tylose and beat just a little. You'll see the difference because it will turn stiffer. Remove from mixer and pour some more sugar on table and scrape out the mass from the bowl. Put some crisco on hands so the mass does not stick to your hands while massaging. Keep massaging and adding powdered sugar until it does not stick to table or hands. After finishing put it in a plastic bag or zip lock bag and store in the fridge for 24hrs and when not using so it doesn't dry out.</div>

Cheese and Vanilla Bean Pound Cake with Almond Glaze:<br />
<br />
8 onz Cream Cheese<br />
2 sticks Butter<br />
2 cups Sugar<br />
6 eggs<br />
2 cups cake flour with baking powder<br />
2 tsp vanilla bean paste<br />
<br />
<br />
Glaze<br />
<br />
2 cups Powdered sugar<br />
2 tsp water<br />
1 tsp almond flavor or extract<br />

Cream the cheese and butter together. Then add sugar and beat until fluffy. Add 3 eggs first but one at the time and save the other 3 for after the flour. Add vanilla beat. Mix in the flour 1 cup at a time, do not over beat. Now add the last 3 eggs one at a time. I used a bundt cake pan. So... butter or grease your pan and fill it with the batter. Bake at 350F for about 35mins. I took it out of the oven when the toothpick almost came out clean but left it in the pan a while longer. It came out awesome and so moist.<br />
<br />
When it was cool I placed it on a dish and made my glaze.<br />
Mix the sugar powder with the water and flavoring, if its to runny just add more sugar and if its to stiff just add a little more water, depending on your taste.<br />

Reduce the mixer speed to low and beat in the eggs one at a time until just incorporated, do not overbeat. Beat in the flour mixture until just combined. I dont know you but I'm a Chocolate Chip Cookie Freak! Yes Freak!! I love them but only homemade ones. I dont like the store bought ones at all! My kids do; they love any chocolate chip cookie. I prefer the soft hot out of the oven ones, Oh My God! There goes the diet! Not good for my diet, even thinking of them I gain the weight! But thats another story...There are many recipes out there, some great, some good and some not soo good! But I found the best Chocolate Chip Cookie recipe for my taste, maybe not so great for yours. In a recent magazine I bought, I found 4 different recipes for 4 different taste buds and I will be sharing all 4 with you. One each day. Chewy Chocolate Chip Cookies<br />
<br />
Makes about 30 cookies<br />
2 <span style="font-size: x-small;">3/4</span> cups All-purpose Flour<br />
1 tsp salt<br />
1 tsp baking Powder<br />
1 tsp baking soda<br />
2 <span style="font-size: x-small;">1/2 Stiicks </span>unsalted butter, softened<br />
1 <span style="font-size: x-small;">3/4 </span> cups packed brown sugar<br />
1/4 cup granulated sugar<br />
2 large eggs<br />
2 tsp vanilla extract<br />
2 cups semisweet chocolate chip<br />

Sift the flour, salt, baking soda and baking powder together into a large bowl. Beat the butter, brown sugar and granulated sugar in a bowl with a mixer on medium-high speed until pale and fluffy, about 4 minutes. Beat in the eggs one at a time, then beat in the vanilla. Reduce the mixer speed to low. Add the flour mixture and beat until combined. Stir in the chips by hand. Press plastic wrap directly onto the surface of the dough and refrigerate at least 1 hr. Preheat oven to 375F. Line 2 baking sheets with parchment paper and drop heaping tablespoonful of dough onto it. Bake until cookies are golden around the edges but still soft in the middle, about 12 mins.Remove from oven and let cool about 10 mins on the baking sheets then transfer to cooling rack. Enjoy!!<br />
